Some of this is incomplete (I never finished gathering data for damage/hp for instance) but maybe it'll interest someone else out there.

(opening/smashing a door takes one turn. door breakers (and probably door openers too) will interact with a door they find themselves next to, even if asleep!! so for instance monsters spawned on the first turn will break doors they're next to asap)
(gelatinous globs pick up items on the start of their turn, NOT simultaneously with moving onto a tile. when it attacks or moves away or w/e it picks up anything that's on its current tile then does the action)

Nesting enchanted packs seems a lot like pushing pols of a magnet together. The closer they get the more they resist! At last you give up.

(enemies seem to swap their wandering AI from random motion in rooms to straight motion in corridors; however they can sometimes flip back and forth endlessly in a corridor if, for instance, a necromancer teleports from a room to a corridor (this has been confirmed))
(shooting a bolt at an unrevealed secret door says it explodes in mid air, rather than hitting a wall)
(!!!ice devils regenerate every 2 seconds/1 step??!!!)
(rune of return triggers on the next minute boundary OR the minute boundary after that. seems to be randomly decided)
(slowing monsters makes them very susceptible to hit and run tactics; use it if you expect to spend more mana on a healing, offensive or evasion technique)
(dungeon level 1 of game 2 under experts only is 48x48, then 57x57, 65x65, 63x63/61x61... oh, looks like there's a random factor)
(dungeon floors that have 'gone extinct' lay dormant for hours? then abruptly spring back to life)
(dragon breath extends four tiles horizontally and 3-more? tiles diagonally)

HYPOTHESIS: an ancient dragon breathed at me from 5 tiles away and very old from 4, old from 3, so maybe dragon breath has a maximum range related to its age class?
(the room with four bronze statues and two wooden that come to life (with eight on the sides remaining on their pedestals) always appears on floor 17 and always has, in the center, a glyph of warding w/ an enchanted steel helmet (very strongly) on top of that. it can have other traps or stairs as well however)
(the elemental portal always appears on floor 19, in the center of a circular room containing 6 air elementals. also a similar circular room, six water elementals, a two tile horizontal underground lake in the center of it)

(random generation seems to make a big pile of stuff up in the top left... confirmed, they just line up in a horizontal row as far to the top and left as possible)
(shop entrances have a special quality wrt summoning monsters over them)
(thieves have interesting quirks - besides being the fastest thing alive, they destroy one of your items if they steal again, they track you down when they teleport away but only sometimes (I suspect light to dark and maybe dark to dark, if they go into light they reset?), they can go through uncovered secret doors, they can tug on your purse even if you have no purse...)
(sleeping monsters seem to have a random chance of waking up if you're within two tiles, or it only checks on boundary seconds. but they can bring monsters down with them?)
(if you equip an amulet of burden or change your strength, it doesn't recalculate movement speed until you manipulate something e.g. drop, pick up, move around)
